Gobi – 65 | Cauliflower fry
Gobi 65 is one starter which I can keep munching on and on and on. All kids love this vegetable, and in this form it is definitely loved by everyone. I have never seen someone saying no to this dish. I have used beetroot juice in this recipe to get a natural red color, and to avoid using artificial food color and it did its job. Gobi 65 had a bright red color and the beetroot flavor was not seen at all. Do give it a try and let me know how you liked it.
I use grated lemon peel for tanginess. There is a lot of health benefits in the peel of lemon. But unfortunately most of us extract only the juice of it and consume. The peel of citrus fruits contain a lot of Vitamin C, antioxidants and its also anti- cancer. More info here. Its easier to grate the skin of frozen lemons, so I have freezed a batch of lemons and whenever needed I grate the peel and use it. Hope you will try it too.
Ingredients for Gobi 65
- Cauliflower – 1 big flower , cut into florets
- Salt – 1 tsp + 1 tsp
- Turmeric powder – 1 tsp
- Ginger garlic paste – 2 tsp
- Red chilly powder – 2 tsp
- Beetroot – 15 grams or half of a small beetroot
- Oil – to deep fry
- Corn flour – 3 tbsp
- All purpose flour / Maida – 3 tbsp
- Lemon juice – from half a lemon or Grated frozen lemon – 1/2 tsp
- Curry leaves – to garnish
Method:
- Boil enough water with salt and turmeric, add the cauliflower florets into it and set aside for 10 minutes.
- Chop the beetroot roughly and grind with little water to get its juice.
- Filter the juice into a wide bowl and add corn flour, maida, salt, ginger garlic paste and red chilly powder .
- Mix well and add few teaspoons of water if needed, to make a smooth paste.
- Mix well and make a smooth paste.
- Add lemon juice or lemon zest to make it tangy and give a quick mix.
- Now, drain the cauliflower florets from the hot water and add it.
- Mix it well with the smooth paste.
- Keep it aside for 30 minutes.
- Heat oil in a pan and deep fry the gobi 65.
- Fry curry leaves and add it for garnishing.
Gobi 65 is ready for snacking !!
Notes:
- Food colors are very dangerous to health, so please try to avoid them. Beetroots give a natural red color. You can try including it instead of artificial food colors.
- After the cauliflower florets are mixed in the paste, it should be thick. If it is runny, you can add few teaspoons of corn flour to make it thick.
