Noolkol Kootu or Kohlrabi kootu is a very simple and delicious sidedish that can be relished with rice or rotis. I am not a big fan of this vegetable, but I love it in this form. I usually prepare it as a side dish for rotis for dinner. It has lot of health benefits too. Noolkol is full of nutrients and minerals like copper, potassium, manganese, iron, and calcium, as well as vitamins, such as vitamin C, B-complex vitamins, vitamin A, and vitamin K. This vegetable fried rice recipe is one that I learnt from my college friend Heyma. Her mom used to give this vegetable fried rice for lunch and the whole class will be awaiting for her box. Poor girl, she will get nothing at the end. It used to be so much flavorful. I remember that I got the recipe from her in phone and penned down during those days. This is one of the very few recipes that I learnt to cook, before marriage. I would suggest to make the rice beforehand and let it cool down completely. This helps it to stay firm while tossing with the veggies. If the rice was cooked and left in the refrigerator overnight it would be best.
