Veg Fried Rice

This vegetable fried rice recipe is one that I learnt from my college friend Heyma. Her mom used to give this vegetable fried rice for lunch and the whole class will be awaiting for her box. Poor girl, she will get nothing at the end. It used to be so much flavorful. I remember that I got the recipe from her in phone and penned down during those days. This is one of the very few recipes that I learnt to cook, before marriage.

I would suggest to make the rice beforehand and let it cool down completely. This helps it to stay firm while tossing with the veggies. If the rice was cooked and left in the refrigerator overnight it would be best.


Here comes the recipe for vegetable fried rice:

Ingredients:

To cook basmati rice:

  • Basmati Rice – 1 cup
  • Oil  – 2 tsp
  • Lemon juice – 1 tsp
  • Salt – 1 tsp
  • Water – 5 cups
  • Soya sauce – 1 tsp
  • Green Chilly sauce / Red chilly sauce – 2 tsp

To make fried rice:

  • Oil – 4 tbsp
  • Carrot – 1
  • Cabbage – 1/4 cup
  • Peas – 1/4 cup
  • Soya sauce – 1 tsp
  • Green Chilly sauce / Red chilly sauce – 1 tsp
  • Tomato sauce – 1 tsp
  • Aginomotto – a pinch ( optional )
  • Salt – as needed
  • Black Pepper or White pepper – 1 1/2 tsp
  • Spring onions – 1/4 cup

Method:

  1. Boil water, with oil, salt and lemon juice . Add basmati rice to the boiling water, let it cook till soft. Drain the water completely.
  2. Allow the rice to cool down completely,
  3. Then add the soya sauce and chilly sauce to the rice and let it rest.
  4. In a cast iron pan, heat oil, add the vegetables and saute in high flame for 2 minutes. Add the sauces and saute for a minute again.
  5. Add salt as needed, aginomotto (if adding) to enhance the flavor. It is not good for health. So you may omit it if you prefer not to use it.
  6. Mix the cooled rice and crush fresh pepper or pepper powder to it.
  7. Garnish with spring onions and serve !!

Enjoy it with tomato sauce or manchurian, the best combo!!

Note:

  • Using Green Chilly sauce will retain white colour in the rice. But I am not getting it here, so I have used red chilly sauce.
  • Adding crushed pepper at the end is very important, it really adds so much to the rice.
