Kothu Chapathi

Kothu Chapathi is a recipe we tried from the idea of kothu parota.. I love the egg kothu parotta from the road side vendors in chennai, but I try to avoid maida at home.. so never tried making parota at home. But wished to replicate it with chapathis or rotis, so came up with this recipe. After we did this once, we have started to make this often at home. Whenever I go out of ideas, on what to prepare as sidedish for chapathi , I go with this and I can be sure there will be no leftovers 😀

I have used carrots and broccoli to make it more healthy and colourful, you can use any veggies of your choice. You can use also use your leftover rotis and they will all be gone in a jiffy. 🙂


Kothu Chapathi


Lets get on to the recipe of Kothu Chapathi :

Prep Time: 10 mins | Cook time: 20 mins | Total time: 30 mins | Serves: 3 to 4

Ingredients:

  • Chapathi /Rotis – 7
  • Onions – 2
  • Tomatoes – 2
  • Salt – as needed
  • Turmeric powder – 1 tsp
  • Carrot – 1
  • Broccoli – 1/2 cup
  • Chilly powder – 1 tbsp
  • Garam Masala powder – 1 tsp
  • Eggs – 3 ( optional )
  • Pepper powder – 1 tsp
  • Kasuri Methi – 1 tsp  (optional)
  • Coriander leaves – 1 tsp
  • Garlic powder – 1 tsp ( optional )
  • oil – 3 tbsp

Procedure:

1.Chop onions, tomatoes, carrots and broccoli .
2.Cut chapathis into small pieces.

3.Heat a pan with oil and add the chopped onions.

4. Add salt and turmeric powder and fry the onions till it becomes soft.

5. Add tomatoes and saute till it turns mushy.

6. Now add chopped carrot cook till it becomes soft.

7.Add broccoli and stir well.

8. Add red chilly powder and garam masala and stir in.
9. Then add a cup of water and let the veggies get cooked well.

10. Add 3 eggs to the veggies and stir well.  This is optional, you may skip adding eggs.

11. Add pepper powder and mix.

12. Add chapathi pieces and mix well.

13. Add kasuri methi leaves and/ or coriander leaves . Mix well.
14. Garlic powder can be added , you can avoid if you dont like the flavour.

15.Kothu Chapathi is ready. Enjoy it as a evening snack or for dinner .
