Moong Sprouts Curry

Moong Sprouts Curry | Moong sprouts sabzi | Sprouted Green Gram Curry with stepwise pictures . Moong can be easily sprouted like this. I often make this curry as a sidedish for chapatis for dinner. This is a quick and easy recipe and I plan to make it when I feel lazy to cut veggies . My kids like to have this curry along with yoghurt, as sidedish for chapati. My son says it as ‘ payaru thayiru ‘ πŸ˜€  Pachai Payaru is green gram in tamil .  Thayiru is the tamil word for curd or yoghurt.

Here is my recipe for Moong sprouts curry

Ingredients:

  • Moong sprouts  –  1 cup
  • Onion – 1
  • Ginger – half inch piece
  • Garlic – 5 small pods or 2 large pods
  • Green chilly – 2
  • Jeera / Cumin seeds – 1 tsp
  • Tomato – 2
  • Turmeric powder – 1 tsp
  • Chilly powder – 1 tsp
  • Coriander powder – 1 tsp
  • Garam Masala powder  – 1 tsp
  • Kasuri Methi – a handful
  • Oil – 2 tbsp
  • Salt – to taste

Method:

  1. Sprout the moong dal previous night.
  2. Grind green chilly, ginger and garlic.

  3. Add roughly chopped onions to it and pulse it , but do not make it like a paste.
  4. In a pressure pan, heat oil, and temper with jeera.

  5. Add the ginger, garlic, green chilly and onion that has been grinded.
  6. Add salt and saute this for a while, meanwhile grind the tomatoes .

  7. Then add the tomato paste and saute it for a minute.
  8. Add the turmeric powder, chilly powder, coriander powder and garam masala powder.
    Saute it well till the oil separates.
  9. Add the sprouted moong with half cup of water and a handful of kasuri methi leaves crushed.
  10. Pressure cook for 2 whistles and switch off.
  11. After pressure subsides, open and stir well and serve.

Notes:

  • Adding kasuri methi is optional, but I recommend adding it. It gives a nice flavor to this curry.
  • Moong sprouts are also readily available in supermarkets, but I feel its quite easy to sprout it at home.
  • You can replace moong sprouts with other sprouts like black channa dal or white channa in this same recipe.
