Capsicum is a very healthy vegetable. The health benefits of capsicum include relief from stomach issues, back pain, muscle spasms, headaches, cancer, skin aging, peptic ulcers, menopausal problems, lower risk of cardiovascular diseases, and diabetes. It has anti-inflammatory and analgesic properties, and may also provide relief from pain related to arthritis. It has high amounts of vitamin C and vitamin A.

Capsicum peas curry Ingredients :
- Capsicum – 1 cup (green, yellow, red.. or any one colour)
- Green Peas – 1/2 cup
- Oil – 2 tbsp
- Garlic – 5 , finely chopped
- Onion – 1, chopped
- Tomato – 1, chopped
- Salt – as per taste
- Turmeric powder – 1/2 tsp
- Chilly powder – 1 tsp
- Coriander powder – 1 tsp
- Water – 1/2 cup
- Curd/ Yoghurt – 1/2 cup
Detailed recipe:
- Chop garlic finely, chop onion and tomato. Cut capsicum lengthwise.
- If using fresh peas, boil and keep it aside. If using dried peas, soak it in water overnight, then boil it in water and set aside. I have used frozen peas, it doesn’t take much time to cook. So i have used it directly.
- Heat oil in a pan, fry finely chopped garlic.
- Once the garlic has changed in color, add onion and saute till it becomes soft.
- Saute the tomato , with salt and turmeric powder till it becomes mushy.
- Add the colored capsicums and give a quick stir. Add in chilly powder and coriander powder.
- Cook with half cup of water till the capsicums are half done.
- Add in peas and let it boil together, with some curd/yoghurt. Take care that it is not sour. The more creamier it is, the yummy the curry.
- Crush in some kasuri methi and garnish with fresh coriander leaves.
- Serve it warm rotis or pulkas.
