Carrot Halwa
Carrot halwa is a simple yet nutritious sweet that can be enjoyed guilt-free as this recipe uses only jaggery instead of white sugar. It needs very few ingredients , and can be prepared quickly.
Ingredients for carrot halwa:
- Carrots – 4
- Jaggery 3/4 cup ( can reduce to 1/2 cup if you want mild sweetness, or if your carrots are too sweet )
- Milk – 1 cup
- Turmeric powder – 1/2 tsp ( optional )
- Ghee – 2 tsp
- Cashews – 10 ( to garnish )
Method:
1. Roast cashews in ghee and set aside.
2. Saute the shredded carrots for few minutes and then add milk and let the carrots get cooked in the milk.
3. After it is cooked and the milk is fully absorbed, add shredded jaggery or filtered jaggery syrup.
4. Add turmeric powder to enhance the colour of carrot halwa.
5. After the jaggery is well absorbed and it reaches carrot halwa consistency, add the roasted cashews and serve.
Enjoy hot carrot halwa with Gulab jamuns or cold carrot halwa or pulse few teaspoons of this carrot halwa with a glass of milk to enjoy it as your carrot milk shake !!
