Mutton Biriyani
Mutton biriyani is always extra special than chicken biriyani , because of the flavor and taste mutton lends to the biriyani. The mutton cooked with all the spices, and the ginger garlic paste and the aroma of basmati rice makes our mouth watering even before the biriyani gets ready. I always like the meat to be cooked very soft, so I pressure cook for 5 or 6 whistles. Then I add the basmati rice to it, which gets cooked quickly. But my favourite is always this chicken biriyani.

Ingredients needed:
To marinate :
- Mutton – 1/2 kg
- Salt – 1 tsp
- Turmeric powder – 1/2 tsp
- Red chilly powder – 2 tsp
- Coriander powder – 2 tsp
- Curd – 1/2 cup
- Lemon juice – 1 tsp ( optional )
- Basmati Rice – 2 cups
- Bay leaves – 2
- Star Anise – 2
- Cinnamon sticks – 2
- Cardamom – 5
- Cloves – 7
- Green chillies – 2
- Onion – 4
- Tomato – 4
- Ginger garlic paste – 5 tbsp
- Turmeric powder – 1/2 tsp
- Mint leaves – 1/2 cup
- Coriander leaves – 1/2 cup
- Salt – as needed
- Oil – 1/2 cup
Method:
1. Marinate mutton with the ingredients listed under ‘to marinate’. Let it rest for an hour
2. Wash and soak basmati rice for 15 minutes.
3. Heat oil in a pressure cooker.
4. Add bay leaves, star anise, cinnamon , cloves and cardamom.
5. Add green chillies and sliced onion with salt and turmeric powder, saute till onions become soft.
6. Add ginger garlic paste and saute till the raw smell is gone completely .
7. Add chopped tomatoes and mix well till it becomes mushy.
8. Add the marinated mutton , mint leaves and coriander leaves with a cup of water.
9. Pressure cook for 5 whistles.
10. After the pressure subsides, open the cooker and add basmati rice .
11. Give a quick stir and wait till the rice gets 70% cooked. Give a stir.
12. Close the pressure cooker without whistle and let it be in low flame for 15 minutes.
Now mutton biriyani is ready, Can be served with any raita of your choice.
