Chicken Noodles
I like egg noodles and chicken noodles served by roadside shops. I have always watched the way streetside vendors prepare fried rice and noodles. Wanted to give a try at home. Last week, when I prepared chicken pakoda, we had some leftover. So I have used the chicken pakoda to make this chicken noodles. You can make veggie version of it by following the same procedure and just omitting the chicken pieces.
Ingredients required for Chicken noodles:
- Plain noodles – 1 pkt
- Garlic – 5 pods, sliced
- Onion – 1
- Mixed veggies – 3/4 cup ( I have used beans, capsicum – red and yellow, carrot and cabbage )
- Red chilly sauce – 1 tsp
- Tomato sauce – 1 tsp
- Soya sauce – 1 tsp
- salt – as per taste ( keep in mind, all the sauces contain salt )
- Oil – 2 tbsp
- Chicken – 1/2 cup ( pieces from chicken 65 or chicken pakoda or any chicken fry )
Method:
1. Cook plain noodles as mentioned in your packet.
2. Set aside. Add a tsp of oil and mix it up.
3. In a pan, heat oil and saute garlic till it turns brown.
4. Saute onion till it turns soft.
5. Then add the mixed veggies, saute till they are half done. They need not be cooked very soft. Crunchy veggies in the noodles add a great texture.
6. Add the sauces and salt. Stir well.
7. Now add the chicken bits, and the cooked noodles. Mix them well.
8. Garnish with spring onions and serve hot!!
Enjoy!!
